SIMPLE CAULIFLOWER BITES


I've scoured the internet yet again to search for some different ways to change up the daily routine of what we eat here in my house.  It's so simple to get caught up in the mundane reality of eating literally the same shit, every single day.  Amirite?  I know, I know.  I found these delicious looking cauliflower bites with a light coating of breadcrumbs, a mixture of spices and a hint of Parmesan cheese.  I can't say it's the absolutely HEALTHIEST thing, but it's not terrible and it's an alternative to something heavier, like potatoes.  Here's how I made them.  



Instead of using the set spice mixture that I found in the recipe online, I decided to just make my own.  All I used was pepper, paprika and red pepper flakes.  I like things spicy, so be sure to make your own mixture if you like certain spices and not the ones I've used.  This recipe is totally customizable so go crazy!  You'll also need Parmesan cheese, breadcrumbs, olive oil and of course the cauliflower.  To coat the pieces of cauliflower before you cook them in the pan, you will also need flower and one egg, so go ahead and grab those as well.  


Being that I was using a frozen bag of cauliflower, I defrosted them in a glass container of water.  This was nice because I didn't want to worry about 'cooking them' in the microwave before I even 'cooked them' in the pan.  I prepped the one egg and the 1/2 cup of flower for the 2 cups of cauliflower I was making.  You can one by one coat each piece with the egg and flour, or you can put everything in a huge bag (except your spice mixture) and shake it.  Then, coat them with the spice mixture (thats what I did).


Begin to cook them in the oil.  Do a couple pieces at a time, don't overcrowd the pan.  


Cook them until they're crispy.  Let me tell you, they are delicious.  They are really easy to just pop in your mouth while you're cooking, use as a side or even as a football snack.  Let me know if you're planning on giving them a try and tweet me your pictures!
