Light Flatbread Sandwich for End of Summer

As I mentioned, one of the reasons I love the late moments of August so much is because local summer is just around the corner and guess what?  Local summer is FINALLY here.  This is easily one of my favorite times of the year for so many reasons.  I love the calm, dedicated nature of the year.  Everyone seems to be going back to school or work, the weather seems more manageable to everyone and attitudes are just all around better for everyone.

Because we are still left with 80+ degree days in September for the most part, I love taking advantage of summery meals, the fresh produce that's still growing in my fathers garden, and easily constructible meals.

This is just a super simple wrap that absolutely anyone can pull together and make.  It is actually perfect for work or school lunches and the ingredients are so simple to adjust should you or your child like something better.  Here are the ingredients and how I made it.

Kraft Balsamic Vinaigrette Dressing, Arnold Healthy Multi-Grain Pocket Thins
Both of them I found at Stop and Shop

Tomato, feta cheese, vegetables
The tomato was freshly picked from my fathers garden, feta cheese from Costco and the vegetables were leftover from last nights dinner (also from Costco).

Throw everything together!

Like I said, this is a super simple thing to customize and make your own.  If you're not a fan of Feta cheese, go ahead and replace it with whatever you like.  It's also a great way to put what ingredients or leftovers you have in the fridge to use.  My father always taught me that wasting food is a waste of time.  He's right, lets be honest.

Whats your favorite thing to throw together?  Send me a tweet and let me know if you give this a try!
